A sweet reminder that a healthy substitution does not equal deprivation. This recipe is ridiculously simple and made with ingredients you are likely to already have in your pantry. Blend up a batch and keep it in the freezer for a healthy warm weather dessert. Or serve it in a cone at your kiddo’s next birthday party.
INGREDIENTS:
4 large bananas, broken into small chunks, and previously frozen
1/4 cup canned lite coconut milk
1/4 cup 100 percent pure peanut butter, unsweetened, no added salt (creamy or crunchy)
pinch of sea salt
1 tablespoon maple syrup
1/4 cup mini dark chocolate chips
INSTRUCTIONS:
Place the frozen banana slices and coconut milk in the bowl of a food processor. Blend until smooth, stopping to scrape down the sides with a rubber spatula as needed. Add the peanut butter, pinch of salt, and maple syrup and blend again to combine. Stir in chocolate chips at the end.
Transfer to a container with a lid and freeze until solid. Serve in a cup or a cone anytime—heck, you could even eat some with breakfast!
